Summer Menu Summer heat always inspires me to cook dishes from warmer climates- New Orleans, Morocco, Mexico and the Caribbean.
Creole Bread Homemade French bread rolled around spicy sausage and vegetables, then baked until crispy.
Roasted Chicken Tacos Roasted and shredded chicken with Mexican-inspired spices, Spanish rice, salsa and guacamole (all homemade).
Stuffed Eggplant Eggplant stuffed with ground lamb or beef, tomatoes, pine nuts and spices.
Moroccan Spiced Leg of Lamb Boneless leg of lamb butterflied and rolled with a Moroccan inspired compound butter. I can bake this, or just prepare the meat for grilling.
Chicken, Swiss Chard and Mushroom Etoufee Non-traditional Creole Etoufee with chicken, Swiss chard and mushrooms, smothered in a garlic roux, served over brown rice.
Stuffed Chicken Breasts Chicken breast stuffed with feta cheese and spinach, then baked in a homemade tomato sauce.
